Tzatziki-It’s not just a case of combining cucumber with yoghurt!

Tzatziki經典西臘優格沾醬
It’s cool & creamy sauce that serve as condiment on BBQ,fish dish & sandwich!
½ a large cucumber半條小黃瓜(去籽去皮,加鹽去水)
2 cloves of garlic 2瓣大蒜切碎
2 Tbs quality olive oil 2大匙上等橄欖油
500g strained Greek yoghurt 500克希臘優格(瀝乾)或較稠的原味優格
A small bunch of fresh dill一小段新鮮蒔蘿
A few sprigs of fresh mint一小把香菜
1 lemon一顆檸檬
Sea salt & pepper to taste適量胡椒和海鹽調味
*An essential step is removing the liquid from the grated cucumber to prevent the yoghurt from becoming diluted!
將以上食材攪拌均勻上桌.
重點是,請切記將小黃瓜確實抓鹽去水至少10分鐘,以免影響風味或讓沾醬太過稀釋單薄.
