{小生意的大自由}Sweet dreams

從開始有念頭,要做個心中理想的小生意,就表示了你已經踏上這個夢的旅程.
這“抗拒,逃脫,放下,告別主流”的過程,無論輕鬆快樂,風和日麗順水行舟,
或者建設好堅強心裡工事,克服周遭所有阻力,義無反顧,壯烈成仁!
你終究要做出一個高度自我安排的選擇.
我覺得,光是這個決定,就已經很勇敢了.


當然,要做個小生意,自由快樂是基本配備..
而你又必須在夢想生活與工作收入間找出一個平衡點,這個平衡點,
就是影響這個小生意風格的自由代價.

5 minute Fresh Salsa簡易版新鮮蕃茄莎莎醬
1小把香菜,半根西洋芹,2瓣大蒜,1條醃墨西哥辣椒(可省略),1小顆檸檬汁液,1/4顆洋蔥或3根青蔥,
2顆中型蕃茄或6顆小蕃茄,1小匙卡宴辣椒粉,1小匙茴香粉,胡椒,鹽&橄欖油少許調味
全部食材各自切成1cm角丁,混合均勻.入冰箱冷藏1個小時即可.
*除可沾食洋芋片或配麵飯外,也可將酪梨切片放在麵包,在鋪上莎莎醬,並撒放乳酪,
進烤箱230度焗烤6-10分鐘!
1 small bunch cilantro,½ celery,2 cloves garlic,1 jalapeno pepper(optional),
juice of 1 limes,¼ onion(or 2-3 spring onion),2 medium tomatoes,
1 pinch cayenne,1 pinch cummins powder,few drops olive oil,
salt & pepper to taste as you go.
Chopped & combine all ingredients & mix well
Refrigerate for at least 1 hour to allow flavors to incorporate.
It’s all about chopping!

{一種米飼百樣人}It takes all sorts to make a world 花生Peanut-美國人俗稱渺小,無價值之物.
在台灣,卻有一些農家就靠種花生,將孩子拉拔長大.
有人靠榨花生油,開著油行.
為了做麻糬,有人將花生磨成了粉,
花生磨成了粉,夾進了捲餅裡.
在這土地上
有人種土豆,有人加工土豆,有人吃土豆.
呵呵~閒來喝杯酒,起碼也得配些花生米吧!
American English commonly referred to peanuts are tiny & valueless,
But,there are some farmers in Taiwan grows peanut to feed the entire family,
& Businessman making peanut products,
Some people grind peanuts into sweet powder for Mochi(sticky rice cake),
& Others like to eat peanuts as snack when they drink.
People Grows peanuts,Produce peanuts,Eat peanuts!

花生芝麻醬Peanut butter with Tahini

拌涼麵,作蔬果捲或抹在麵包裡,細膩稠滑柔順的堅果香Just in case you need a little shake-up for same-old-same-old PB&J,How about some PB&T?

Slap some deliciously nutritious ingredients inside a flatbread,with extra kick from ginger..Or,maybe try to mix with some Japanese noodles?Be a bit more adventurous!
花生醬6大匙/芝麻醬2大匙/蒜末40g/薑末20g/蔥末20g/鹽0.5茶匙  
全部食材混拌均勻即可
Peanut butter 6TBS/Tahini 2TBS,
garlic 40g/ginger 20g/shallot 20g/salt 0.5tsp-Chopped them very fine,
& Combined them well until smooth & creamy.Viola!

露西的啤酒冰棒Lucy’s beersicles

‘若非現在,更待何時?’‘If not now,then when?’
清晨6點寮國的山城龍坡邦,我和一位優雅的加拿大旅人,
坐在露天小攤的紅色塑膠椅上喝咖啡.這位剛認識的的加拿大女士,Lucy露西如此信心滿滿地告訴我.清晨的早市,空氣中飄散著瓜果蔬菜夾雜雞鴨生鮮的氣味!所有的商品都攤在市場的地上,
有點雜亂和邋遢,但卻是活生生的不造作生活.
這位剛認識的的加拿大女士告訴我,5年前結束了30年漫長的婚姻生活,
在茫然悲傷中決定離開加拿大,開始她新的人生章節..
‘出發很難.離開會令你既恐懼又孤獨.’露西說著
‘你可能會花上一半的時間質疑自己,到底在幹嘛?
或是半夜裡聽到你那哼著歌撥著弦心底的夢,你那該死的直覺會引領你到的任何地方...
到底要幹嘛呀?
有時你會經歷某些毫無意義,令人洩氣的日子,有時又歡喜雀躍,意志高揚!
但這段歷程會美的難以言喻,會徹底衝擊你的人生.
飛吧!那會開闊你的人生~’
‘If not now,then when?’said the cheerful,
elegant looking Canadian lady I had run into 
at six in the morning at the morning market 
in the Luang Prabang at Laos.
We were drinking coffee at an outdoor table 
in the reek of fish & meat & some 
unbelievable fresh vege & fruits merchants,
beside a group of croaking frogs in a 
gilded cage.
‘The first step is always the hardest!Leave everything behind & set off could 
make you scared to death & lonely!'
Lucy,the Canadian lady who is aged 65,told me just before leaving Canada 5 years ago,
she had come to the end of long marriage,& she had to leave,when she did not need to 
concentrate on the task,in a state of 
dazed grief.
‘but the journey will blow your mind off completely,and the beauty on the roads 
is beyond the words!’
‘你得試試這個!’露西向一個推攤車纏著頭巾的老婦招手.指著攤車上大型保利龍盒裡色彩鮮艷的冰棒,
要了一堆,再塞了幾張鈔票給老婦,我瞥見那是5張1000kip的鈔票,折合台幣不到20元!
‘還真他#的涼爽啊~’
‘以前夏天的時候,我都會做一大堆彩色的啤酒冰棒!嗯~~~啤酒冰棒!’
‘啤酒冰棒?’
‘嗯.....啤酒冰棒!成人版的夏日甜點~’
‘食譜?比例?’

’沒食譜,沒比例啦!就跟著你的感覺走吧!’
An old woman pushed past with a cart full of bagged long-stripe of pink & purple popsicles,
Lucy called her over.’Try one of these,’She said.’Damn good!’
They were fruity popsicles.’I used to make loads of colourful beersiclies during summer times!’
Lucy told me
‘Beersicles??’
’Ooooooooooo~Beersicles!One of my favorite summer dessert recipes!’

Alright,No Recipes,just a fun for whatever you want to drink,lick or bite..

{私房菜}You've gotta eat like nobody is watching!

(醋漬紫洋蔥)Quick Pickled Red Onions

1.紫洋蔥絲大的半棵(黃洋蔥也ok,但紫色賣像無敵)+1/2匙海鹽,入小盆略抓,醃10分
2.糖3/4匙+孜然1/2匙+茴香籽1/4匙+黑胡椒粒1/2匙,置小碗混拌,倒入洋蔥裡拌勻
3.取1乾淨玻璃罐,填入香料洋蔥絲
4.注入適量蘋果醋到一半瓶身,再以水填至瓶子肩頸處,用筷子拌一拌,充分混合
5.蓋上瓶蓋上下搖晃一下,送入冰箱冷藏,約2日可收成
PS.這次我加了2片新鮮薄檸檬片和新鮮香草,香料黃金組合可隨個人喜好!
此斯風味獨特馨香夠勁,單吃,夾三明治,漢堡,拌麵或配飯,能讓主食的滋味更天開地闊立體起來,
營養成效也因為發酵和醋漬而向上攀升.
1.Mix A ½ large red onions(thinly sliced)with ½ tsp sea salt,set aside for 10 mins.
2.Mix ¾ tsp sugar,½ tsp whole peppercorns & ¼ tsp fennel seeds,1/4tsp cumin seeds.
3.Place onion with spices in a large  bottle.Pour apple cider vinegar about half bottle,
Then,cover with clean water.
4.Cover tightly and shake gently,then store in refrigerator.
It'll be ready for 2 days.
Pickled red onions are not only drop-dead pretty thing I’ve ever seen.
They are awesome when it comes to jazzing up lots of different kinds of foods!

人是慣性動物,總是會不自覺地,就想循著老路子走,熟悉帶給人無以名狀的安心.
大半時候,人生的冒險的確多少需擔負一定程度的風險,比如事業轉換跑道或決定依靠終生的良人.唯獨在廚房裡,你不必博命演出!只要不是太過奢華食材如松露巧克力或法式酸奶油醬Crème fraîche都好談.而且,總覺得好的料理或食譜跟好伴侶一樣,不會從天而降,喜歡就得勇敢主動出擊!大不了的冒險災難就是勉為其難囫圇吞下肚,真的難以下嚥就全數餵廚餘桶!

Ooooooh goodness..I tell ya.You can bet money on that!
I can see you are thinking I’m a little weird...
The peanut butter is earthy base flavor.The pickles are a combination of sweet & tart,
Maple syrup compliments the saltiness of the peanut butter & Pickles.Mmmmm..Yuummy!


I get it..you’re still looking at me like I’m crazy!
But,I can also feel your curiosity..Give this sandwich a try.
